“You agreed to one paragraph after ignoring sixteen messages.”
“Seventeen,” Julien says.
Claire looks at him. “Eighteen.”
Julien points at me with his coffee.
“I told you.”
“I returned two,” I say.
Claire turns her attention back to me.
“You returned two with the emotional range of a locked door.”
“Then they were consistent with my brand.”
Claire’s smile is brief and dangerous.
“If you use the word brand again in my presence, I will assume you have finally decided to cooperate properly.”
“I retract it.”
“Wise,” Claire says.
For the next forty minutes, she attempts to extract usable language from me while I inspect prep, correct seasoning, reject one produce delivery outright, and listen to her make the case for visibility as if visibility has ever improved a sauce.
She gets her paragraph.
Barely.
It says Maison Holt will open with forty covers, a seasonal tasting menu built around restraint, sourcing, and the discipline of letting ingredients carry their own weight. It mentions nothing about reinvention, legacy, emotional journeys, returning to form, or any other phrase that would require me to walk into traffic. Claire complains it is severe. Julien says severe is better than false. I tell them both the fish is more important.
Claire leaves at 10:18 AM with the paragraph, three more questions I refuse to answer, and the air of a woman who has won enough to postpone murder.
The day continues.
By noon, the crew has found its rhythm. By 2:00 PM, Thomas has not ruined the second stock. By 4:30, Elise hasproduced a citrus tart that is structurally correct but emotionally timid, which she receives as criticism and then, after tasting it again, as fact. By 6:00 PM, the kitchen is clean enough to satisfy me and not clean enough to suggest no one worked hard.
Julien stands beside the pass while I check the final list for tomorrow.
“Claire texted,” Julien says.
“She has a condition.”
“She says the paragraph is acceptable.”
“Generous of her.”
“She also says the investor group wants confirmation that the opening menu is locked.”
“The investor group can want things from a distance.”
“That is not an answer.”
“It is if they read carefully.”
Julien slides his phone into his pocket.
